Ya da ba\u015fka t\u00fcrl\u00fc soral\u0131m, kimler yemek kitab\u0131 yazar? Galiba herkes. Uzmanl\u0131k alan\u0131 ne olursa olsun herkes yemek kitab\u0131 yazmak istiyor. Her roman hik\u00e2ye seven oturup bir roman hik\u00e2ye yazm\u0131yor ama her yemek yapan hatta yapmayanlar bile tarifleri bir araya getirip bir kitap ortaya \u00e7\u0131kart\u0131yor.<\/p>\n<p style=\"text-align: justify\">\u00a0A\u015f\u00e7\u0131lar\u0131, yemek k\u00fclt\u00fcr\u00fc ara\u015ft\u0131rmac\u0131lar\u0131n\u0131 bir yana b\u0131rak\u0131rsak bir yemek kitab\u0131 yazman\u0131n arkas\u0131ndaki en b\u00fcy\u00fck d\u00fcrt\u00fc sevilen bir lezzeti payla\u015fmak duygusu olmal\u0131. Annelerin mutfa\u011f\u0131 en b\u00fcy\u00fck kaynak. Ard\u0131ndan da ya\u015fan\u0131lan b\u00f6lge mutfa\u011f\u0131 ve etnik mutfaklar geliyor. Biraz daha yarat\u0131c\u0131 olanlar ise, belki giri\u015fimci demek daha do\u011fru, so\u011fanl\u0131 k\u0131yman\u0131n so\u011fanlar\u0131n\u0131 daha b\u00fcy\u00fck do\u011frayarak ve farkl\u0131 bir ad vererek kendi mutfa\u011f\u0131n\u0131 yarat\u0131yor. Kimileri de domates dilimleri \u00fczerine zeytinya\u011f\u0131yla nar ek\u015fisi gezdirip sa\u011fl\u0131kl\u0131 ya da yal\u0131n mutfak kontenjan\u0131ndan yemek kitab\u0131 yazar\u0131 oluyor.\u00a0<\/p>\n<p style=\"text-align: justify\">Ne de olsa \u00e7a\u011f\u0131m\u0131zda her \u015feyin ba\u015f\u0131 g\u00f6rsellik, iyi bir foto\u011fraf\u00e7\u0131 ile harikalar yaratmak m\u00fcmk\u00fcn. Tabii ki her biri T\u00fcrk mutfak k\u00fclt\u00fcr\u00fcnden izler ta\u015f\u0131yan bu kitaplar\u0131n bollu\u011fu hi\u00e7 olmamalar\u0131ndan \u00e7ok daha iyi. Eminim gelecekte hepsi olumlu ya da olumsuz farkl\u0131 bir konuda referans olacak. \u00c7\u00fcnk\u00fc bas\u0131l\u0131 yemek kitaplar\u0131m\u0131z\u0131n sadece 167 y\u0131ll\u0131k bir ge\u00e7mi\u015fi var.\u00a0<\/p>\n<p><strong>\u0130lk kitap A\u015f\u00e7\u0131lar\u0131n S\u0131\u011f\u0131na\u011f\u0131 <\/strong><\/p>\n<p style=\"text-align: justify\">Yemekler hakk\u0131nda bilgi veren yazmalar\u0131 saymazsak T\u00fcrk mutfa\u011f\u0131na ait ilk yemek kitab\u0131 Mehmet Kamil\u2019in kaleme ald\u0131\u011f\u0131 \u2018Melce\u00fc\u2019t- Tabb\u00e2h\u00een\u2019 (A\u015f\u00e7\u0131lar\u0131n S\u0131\u011f\u0131na\u011f\u0131)1844 y\u0131l\u0131nda bas\u0131l\u0131r. K\u0131rk d\u00f6rt y\u0131l i\u00e7inde dokuz bask\u0131s\u0131 yap\u0131lan, i\u00e7inde 12 b\u00f6l\u00fcm halinde 284 tarifin yer ald\u0131\u011f\u0131 \u2018A\u015f\u00e7\u0131lar\u0131n S\u0131\u011f\u0131na\u011f\u0131\u2019, zaman\u0131n\u0131n en \u00e7ok sat\u0131lan kitaplar\u0131 aras\u0131nda yer al\u0131r.\u00a0<br \/>\n1862 y\u0131l\u0131nda \u0130ngiltere\u2019yi ziyarete giden M\u0131s\u0131r Valisi Mehmet Sait Pa\u015fa Thames Nehri \u00fczerinde Fevz-i Cihad adl\u0131 yat\u0131nda devlet adamlar\u0131na ve asillere bir yemek verir. T\u00fcrabi Efendi taraf\u0131ndan \u0130ngilizceye \u00e7evrilen \u2018Melce\u00fc\u2019t Tebb\u00e2h\u00een\u2019 \u2018Turkish Cookery Book\u2019 ad\u0131yla yeme\u011fe gelen konuklara da\u011f\u0131t\u0131l\u0131r. \u2018Melce\u00fc\u2019t-Tabb\u00e2h\u00een\u2019in 1864 y\u0131l\u0131nda da \u0130ngilizce \u00e7evirisi kitap olarak da bas\u0131l\u0131r. Uzun bir s\u00fcre T\u00fcrk mutfa\u011f\u0131na ait tek kaynak olarak bat\u0131l\u0131lar taraf\u0131ndan kullan\u0131l\u0131r. Yeni bir yemek kitab\u0131n\u0131n bas\u0131lmas\u0131 \u00fczerinden ise neredeyse k\u0131rk y\u0131l ge\u00e7er. 1882 y\u0131l\u0131nda Ay\u015fe Fahriye\u2019nin \u2018Ev Kad\u0131n\u0131\u2019, 1900 y\u0131l\u0131nda da Mahmut Nedim Tosun\u2019un \u2018A\u015f\u00e7\u0131 Ba\u015f\u0131\u2019 kitaplar\u0131 yay\u0131mlan\u0131r. Cumhuriyet d\u00f6neminde ise sosyal ve i\u015f ya\u015fam\u0131na kat\u0131lan modern ev kad\u0131nlar\u0131na y\u00f6nelik kitaplar yay\u0131mlanmaya ba\u015flar. Sonra g\u00fcn\u00fcm\u00fczde bir klasik olan Ekrem Muhiddin\u2019nin kitaplar\u0131 gelir. Sonra Nevin Hal\u0131c\u0131 gibi ara\u015ft\u0131rmac\u0131lar y\u00f6resel ve b\u00f6lge yemeklerini derler. Ama as\u0131l yemek kitaplar\u0131 patlamas\u0131 1990\u2019lardan sonra ya\u015fan\u0131r.\u00a0<\/p>\n<p style=\"text-align: justify\">Son y\u0131llarda ise neredeyse her ay en az d\u00f6rt be\u015f yemek kitab\u0131 yay\u0131mlan\u0131yor. \u0130\u00e7lerinde ba\u015fucu kitab\u0131 olacak kadar de\u011ferli olanlar da, yemek pi\u015firmeyi bir keyif haline d\u00f6n\u00fc\u015ft\u00fcrecek kadar ba\u015far\u0131l\u0131 olanlar\u0131 da var. Ama \u015fimdilik \u00e7o\u011funluk bir bak\u0131l\u0131p kenara b\u0131rak\u0131lacaklarda&#8230;\u00a0<\/p>\n<p><strong>Ha\u015flanm\u0131\u015f yumurta iyi gelir\u00a0<\/strong><\/p>\n<p style=\"text-align: justify\">\u00a0Son d\u00f6nemde \u00e7\u0131kan yemek kitaplar\u0131 aras\u0131nda ku\u015fkusuz en ilginci Va\u011finag P\u00fcrad\u2019\u0131n 1926 y\u0131l\u0131nda \u0130stanbul\u2019da Ermeni harfleriyle T\u00fcrk\u00e7e yay\u0131mlad\u0131\u011f\u0131 \u2018M\u00fckemmel Yemek Kitab\u0131\u2019n\u0131n ilk bas\u0131m\u0131ndan seksen d\u00f6rt y\u0131l sonra yap\u0131lan T\u00fcrk\u00e7e \u00e7evirisi. Va\u011finag P\u00fcrad\u2019\u0131n derledi\u011fi ve yay\u0131mlad\u0131\u011f\u0131, yazar\u0131 bilinmeyen bu yemek kitab\u0131n\u0131n i\u00e7inde 637 tarif yer al\u0131yor. Kitap yemek tarifleri kadar malzemelerle ilgili bilgilerle de dikkati \u00e7ekiyor. \u2018M\u00fckemmel Yemek Kitab\u0131\u2019 g\u00fcn\u00fcm\u00fczdeki yemek kitaplar\u0131n\u0131 aratmayacak bi\u00e7imde kad\u0131n ve erkekler i\u00e7in g\u00fcnl\u00fck \u2018azot\u2019 ve \u2018karbon\u2019 ihtiyac\u0131 i\u00e7in neyi ne kadar yemesi gerekti\u011fi bilgileriyle ba\u015fl\u0131yor.<\/p>\n<p style=\"text-align: justify\">Kat\u0131 yumurtan\u0131n, f\u0131r\u0131nda k\u0131zart\u0131lm\u0131\u015f etin, kavrulmu\u015f k\u0131yman\u0131n hazm\u0131n\u0131n zor; rafadan yumurtan\u0131n, \u0131zgara etin hazm\u0131n\u0131n kolay oldu\u011funu yine bu kitaptan \u00f6\u011freniyoruz.\u00a0<br \/>\n\u2018M\u00fckemmel Yemek Kitab\u0131\u2019 kendinden sonra yaz\u0131lm\u0131\u015f bir\u00e7ok yemek kitab\u0131na esin kayna\u011f\u0131 olmu\u015f. Ama kitab\u0131n \u00f6nemi bununla s\u0131n\u0131rl\u0131 de\u011fil, giri\u015f yaz\u0131s\u0131nda Zafer Yenal\u2019\u0131n vurgulad\u0131\u011f\u0131 gibi 1915\u2019te ya\u015fanan ac\u0131lardan sonra Osmanl\u0131 ve T\u00fcrkiye Cumhuriyeti s\u0131n\u0131rlar\u0131 i\u00e7inde Ermeni harfleriyle T\u00fcrk\u00e7e bas\u0131lan az say\u0131daki kitaptan biri olma \u00f6zelli\u011fine de sahip.\u00a0<\/p>\n<p><strong>Et sular\u0131, sal\u00e7alar, av etleri\u00a0<\/strong><\/p>\n<p style=\"text-align: left\">Et sular\u0131, sal\u00e7alar(sos anlam\u0131nda), \u00e7orbalar, et yemekleri, k\u00fcmes hayvanlar\u0131 ve av etleri, yumurta yemekleri, k\u00f6fteler, bal\u0131klar, dolmalar, k\u0131yma ve b\u00f6rek i\u00e7leri, garnit\u00fcrler, pilavlar, makarnalar, sebzeli yemekler, alafranga usulde et ve sebze yemekleri, hamur i\u015fleri ve tatl\u0131lar b\u00f6l\u00fcmlerinde en basitinden en kompleksine neredeyse d\u00fcnden bug\u00fcne yap\u0131lan t\u00fcm yemekler var. Ayr\u0131ca unutulmu\u015f kimi yemekleri, malzemeleri de hat\u0131rlat\u0131yor kitap. Tr\u00fcf gibi son y\u0131llar\u0131n nadide mantar\u0131n\u0131n y\u00fcz y\u0131l \u00f6nce de bu topraklarda kullan\u0131ld\u0131\u011f\u0131n\u0131 \u00f6\u011frenmek son derece keyifli: \u201cTruf (domalan) beyaz ve esmer olarak iki cinstir. Bu mantar memleketimizin bir \u00e7ok mahallerinde kendi kendine has\u0131l oldu\u011fu halde pek \u00e7oklar\u0131 taraf\u0131ndan ra\u011fbet g\u00f6rmemi\u015ftir. Evropal\u0131lar domalan\u0131 mutfa\u011f\u0131n incisi addederler. Domalan en ziyade sal\u00e7alarda kullan\u0131l\u0131r.
