Bu durum, \u0130stanbul\u2019daki yemek k\u00fclt\u00fcr\u00fcn\u00fcn zenginli\u011fi \u00fczerinde t\u00fcm tarihsel s\u00fcre\u00e7 boyunca \u00e7ok etkiliydi. Anadolu\u2019da ise durum b\u00f6yle de\u011fil. Anadolu derken \u015funu da belirtelim: Rumcada K\u00fc\u00e7\u00fck Asya olarak tan\u0131mlanan Anadolu\u2019yu kitapta incelerken d\u00f6rt b\u00f6l\u00fcme ay\u0131rd\u0131m. Trakya, \u0130zmir ve \u00e7evresinden olu\u015fan \u0130yonya, bug\u00fcn \u0130\u00e7 Anadolu olarak tan\u0131mlanan Kapadokya ve yine g\u00fcn\u00fcm\u00fczde Karadeniz b\u00f6lgesi olarak tan\u0131mlanan Pontus. Bu d\u00f6rt b\u00f6lgenin yemek k\u00fclt\u00fcrlerinin kendine has \u00f6zellikleri vard\u0131r. \u00d6rne\u011fin, \u0130yonya\u2019n\u0131n en \u00f6nemli \u015fehri olan \u0130zmir\u2019le \u0130stanbul\u2019u kar\u015f\u0131la\u015ft\u0131ral\u0131m. \u0130kisi de liman \u015fehridir ama tarihsel olarak \u0130stanbul daha \u00e7ok ithalat, \u0130zmir ise ihracat \u015fehridir. \u0130zmir, Anadolu\u2019nun zenginliklerinin Avrupa\u2019ya, Bat\u0131\u2019ya ihra\u00e7 edildi\u011fi bir \u015fehirdir. Bu anlamda \u0130zmir\u2019deki \u00fcr\u00fcn zenginli\u011fi \u0130stanbul kadar olmasa da Kapadokya ve Pontus\u2019a g\u00f6re \u00e7ok daha fazlad\u0131r. Kapadokya ise Do\u011fu\u2019yla Bat\u0131\u2019y\u0131 birbirine ba\u011flayan bir ge\u00e7it \u00f6zelli\u011fi ta\u015f\u0131r. Bu anlamda \u00f6nemlidir ama \u00fcr\u00fcn \u00e7e\u015fitli\u011fi \u0130stanbul\u2019a ve \u0130zmir\u2019e g\u00f6re daha azd\u0131r. En \u00f6nemli etkenlerden biri de zeytin a\u011fac\u0131n\u0131n \u0130stanbul ve \u0130zmir merkezli \u0130yonya d\u0131\u015f\u0131nda kalan b\u00f6lgelerde olmamas\u0131d\u0131r. Benim babaannem ve b\u00fcy\u00fckbabam Ni\u011fde\u2019nin Ulua\u011fa\u00e7 k\u00f6y\u00fcnden \u0130stanbul\u2019a gelmi\u015flerdi. Yani Kapadokyal\u0131yd\u0131lar. Onlarda zeytinya\u011f\u0131 k\u00fclt\u00fcr\u00fc yoktu. Anneannem ise Trakyal\u0131 bir ba\u011fc\u0131n\u0131n k\u0131z\u0131yd\u0131. Trakya b\u00f6lgesinde de zeytin ve zeytinya\u011f\u0131 pek bilinmez. Trakya\u2019da hayvansal \u00fcr\u00fcnler ve tereya\u011f\u0131 yayg\u0131nd\u0131r. Tabii co\u011frafya gere\u011fi bal\u0131k ve deniz \u00fcr\u00fcnleri de Trakya\u2019da yayg\u0131nd\u0131r. Bu, antik \u00e7a\u011flardan bu yana b\u00f6yledir. Pontus ise tarihsel olarak daha \u00e7ok i\u00e7ine kapal\u0131 bir b\u00f6lge olagelmi\u015ftir.<\/p>\n<p><strong>Co\u011frafyadan s\u00f6z a\u00e7\u0131lm\u0131\u015fken, \u201cYeme\u011fin etnisitesi olmaz co\u011frafyas\u0131 olur\u201d arg\u00fcman\u0131 yemek k\u00fclt\u00fcr\u00fc tart\u0131\u015fmalar\u0131nda \u00e7ok s\u0131k ileri s\u00fcr\u00fcl\u00fcyor. Siz ne d\u00fc\u015f\u00fcn\u00fcyorsunuz?<\/strong><br \/>\nBu arg\u00fcmana \u00e7ok kat\u0131lm\u0131yorum. \u0130klim ve co\u011frafya yemek k\u00fclt\u00fcr\u00fc \u00fczerinde elbette etkilidir. Ancak k\u00fclt\u00fcrel \u00f6zellikler, ko\u015fullar \u00e7ok belirleyicidir. K\u00fclt\u00fcr derken mesela din fakt\u00f6r\u00fc \u00e7ok \u00f6nemlidir. \u00d6rne\u011fin, Rum yemek k\u00fclt\u00fcr\u00fcnden s\u00f6z ediyorsak, B\u00fcy\u00fck Oru\u00e7 d\u00f6nemi, Paskalya d\u00f6nemi, Noel d\u00f6nemi gibi d\u00f6nemlerin yemek k\u00fclt\u00fcr\u00fc \u00fczerinde \u00e7ok etkili oldu\u011funu g\u00f6r\u00fcr\u00fcz. Bu s\u00f6z\u00fcn\u00fc etti\u011fim d\u00f6nelerde pi\u015firilen pek \u00e7ok yemek vard\u0131r. Bu sadece Rumlar i\u00e7in ge\u00e7erli de\u011fil. Farkl\u0131 dinlerde ve k\u00fclt\u00fcrlerde de buna rastl\u0131yoruz.<\/p>\n<p><strong>Osmanl\u0131\u2019n\u0131n y\u0131k\u0131l\u0131\u015f d\u00f6neminde ve Cumhuriyet\u2019in ilk y\u0131llar\u0131nda Anadolu\u2019dan \u0130stanbul\u2019a gelen Rumlar yemek k\u00fclt\u00fcrlerini de getirdiler mi? \u0130stanbul Rumlar\u0131n\u0131n yemek k\u00fclt\u00fcr\u00fc \u00fczerinde etkileri oldu mu?<\/strong><br \/>\nHay\u0131r. \u0130stanbul\u2019un yemek k\u00fclt\u00fcr\u00fc \u00fczerinde Anadolu\u2019dan gelenlerin ciddi bir etkisi olmad\u0131. Kendi aralar\u0131nda ya\u015fatm\u0131\u015f olabilirler ama \u0130stanbul yemek k\u00fclt\u00fcr\u00fc \u00fczerinde ciddi bir etkisi g\u00f6r\u00fclmedi. Bu dedi\u011fim daha \u00e7ok Kapadokyal\u0131lar i\u00e7in ge\u00e7erlidir. Pontus\u2019u terk edenler ise \u00e7o\u011funlukla G\u00fcrcistan\u2019a ya da Yunanistan\u2019a gittiler. Pontus\u2019tan \u0130stanbul\u2019a gelen olmad\u0131.<\/p>\n<p><strong>Peki, M\u00fcbadele sonras\u0131 Yunanistan\u2019a giden Rumlar kendi mutfak k\u00fclt\u00fcrlerini ya\u015fatt\u0131lar m\u0131?<\/strong><br \/>\nSelanik\u2019in kendine \u00f6zg\u00fc, zengin bir yemek k\u00fclt\u00fcr\u00fc vard\u0131r. Atina ise ba\u015fkent olarak \u00e7ok de\u011fi\u015fik b\u00f6lgelerden gelen farkl\u0131 k\u00fclt\u00fcrlere a\u00e7\u0131k bir \u015fehirdir. \u00d6rne\u011fin, Atina\u2019ya Girit, Midilli gibi Ege adalar\u0131ndan gelen pek \u00e7ok g\u00f6\u00e7men vard\u0131r ki onlar\u0131n da kendilerine has yemek k\u00fclt\u00fcrleri vard\u0131r. G\u00fcn\u00fcm\u00fczde maalesef Yunanistan\u2019da \u0130stanbul veya Rum yemek k\u00fclt\u00fcr\u00fcn\u00fc s\u00fcrd\u00fcren lokanta benzeri yerlere rastlam\u0131yoruz. Son \u00f6rnek \u00fcnl\u00fc Pandeli Lokantas\u0131 idi. O da be\u015f y\u0131l \u00f6nce kapand\u0131.<\/p>\n<p><strong>Siz \u0130stanbul\u2019da do\u011fup b\u00fcy\u00fcd\u00fcn\u00fcz. \u0130stanbul\u2019daki Rum ve Ermeni yemek k\u00fclt\u00fcrlerini kar\u015f\u0131la\u015ft\u0131r\u0131r m\u0131s\u0131n\u0131z?<\/strong><br \/>\n\u0130stanbul\u2019da Rumlar\u0131n ve Ermenilerin pek \u00e7ok ortak yemekleri vard\u0131r. Tabii yemekler ortak olsa da isimleri Rumca ve Ermenice olarak tan\u0131mlanm\u0131\u015ft\u0131r. Farkl\u0131l\u0131klara gelince; mesela Rum yemek k\u00fclt\u00fcr\u00fcnde \u2018topik\u2019 bilinmez. Asl\u0131nda tipik bir oru\u00e7 d\u00f6nemi yiyece\u011fi olmas\u0131na ra\u011fmen Rumlar topik bilmezler. \u0130rmik helvas\u0131 her iki toplumda da vard\u0131r ama farkl\u0131 yap\u0131l\u0131r. Ermenilerin \u2018anu\u015fabur\u2019u Rumlarda da vard\u0131r. Ama bu Rumlar i\u00e7in k\u0131\u015f\u0131n kuru meyvelerle yapt\u0131klar\u0131 bir tatl\u0131d\u0131r. Baklava da farkl\u0131d\u0131r. Mesela Yunanistan\u2019da g\u00fcn\u00fcm\u00fczde baklavay\u0131 zeytinya\u011fl\u0131 yaparlar. T\u00fcrkiye\u2019de baklavan\u0131n tereya\u011f ile yap\u0131lmas\u0131n\u0131 yad\u0131rgarlar.<\/p>\n<p><strong>Kitaptan:<\/strong><\/p>\n<p>\u0130stanbul\u2019dan Atina\u2019ya Pandeli Lokantas\u0131<br \/>\n\u0130stanbul\u2019daki, d\u00fcnyan\u0131n ba\u015fl\u0131ca restoran rehberlerinde de yer alan me\u015fhur Pandeli Lokantas\u0131\u2019n\u0131n kurucusu Pandeli \u00c7obano\u011flu Nigde\u2019nin Kurdonos k\u00f6y\u00fcnden \u0130stanbul\u2019a 1901\u2019de hen\u00fcz 9-10 ya\u015flar\u0131ndayken gelir. \u00d6nce garson yama\u011f\u0131 olarak \u00e7al\u0131\u015f\u0131r. Daha sonra a\u015f\u00e7\u0131 olur ve ondan sonra Yemis\u2019teki eski bal\u0131k pazar\u0131n\u0131n yak\u0131n\u0131nda k\u00fc\u00e7\u00fck bir d\u00fckk\u00e2nda kendi lokantas\u0131n\u0131 a\u00e7ar. Zamanla \u00fcn\u00fc b\u00fct\u00fcn Istanbul\u2019a yay\u0131l\u0131r. Her \u00f6gle vakti, d\u00fckk\u00e2n\u0131 damak zevkine \u00f6nem veren se\u00e7kin \u0130stanbullularca dolup tasar. Yabanc\u0131 ziyaret\u00e7iler, diplomatlar, ba\u015fbakanlar, devlet ba\u015fkanlar\u0131 \u2013Celal Bayar, Adnan Menderes, \u0130spanya Kral\u0131 Alfonso, Ali Han ve daha niceleri\u2013 lokantan\u0131n m\u00fc\u015fterisi olur. 1933\u2019te T\u00fcrk \u2013 Yunan dostluk antla\u015fmas\u0131n\u0131n imzalanmas\u0131 nedeniyle T\u00fcrkiye\u2019ye gelen Venizelos da burada yemek yer ve Pandeli\u2019ye alt\u0131n t\u00fct\u00fcn tabakas\u0131n\u0131 hediye eder.<br \/>\n1955 Eyl\u00fcl\u2019\u00fcnde Pandeli Lokantas\u0131 da \u0130stanbul\u2019daki b\u00fct\u00fcn Rum d\u00fckk\u00e2nlar\u0131n\u0131 hedefleyen vandalizmden pay\u0131n\u0131 al\u0131r. Bunun \u00fczerine Pandeli lokantay\u0131 bir daha a\u00e7mayaca\u011f\u0131n\u0131 resmen duyurur. Ancak d\u00f6nemin \u0130stanbul Valisi ve belediye ba\u015fkan\u0131n\u0131n m\u00fcdahale ve \u0131srarlar\u0131yla kendisine M\u0131s\u0131r \u00c7ar\u015f\u0131s\u0131\u2019n\u0131n ilk kat\u0131nda, Emin\u00f6n\u00fc Meydan\u0131\u2019na bakan merkezi giri\u015fin \u00fcst\u00fcnde Bo\u011faz manzaral\u0131 bir d\u00fckk\u00e2n tahsis edilir, ayr\u0131ca \u0130stanbul\u2019un ilk turistik lokantas\u0131n\u0131 isletme hakk\u0131 verilir ve lokanta d\u00fcnya \u00e7ap\u0131ndaki turist rehberlerinde tan\u0131t\u0131l\u0131r. Lokanta, ayn\u0131 yerde g\u00fcn\u00fcm\u00fcze kadar Pandeli\u2019nin o\u011flu Hristo \u00c7obano\u011flu\u2019nun idaresi alt\u0131nda faaliyet g\u00f6stermi\u015ftir. Hristo t\u0131p e\u011fitimi g\u00f6rmesine ra\u011fmen babas\u0131n\u0131n \u00f6l\u00fcm\u00fcnden sonra \u20131960\u2019lar\u0131n sonlar\u0131nda\u2013 baba mesle\u011fini devralarak \u0130stanbul mutfa\u011f\u0131 gelene\u011fini ad\u0131na yara\u015f\u0131r bi\u00e7imde bug\u00fcne kadar devam ettirir. Lokanta, ticaret piyasas\u0131na hitap eden lokantalar\u0131n gelene\u011fini s\u00fcrd\u00fcrerek sadece \u00f6gle vakti servis yapar.<\/p>\n<div id=\"photoholder2\" class=\"photoholder no-display appear\"><\/div>\n<p>Pandeli, hi\u00e7 \u015f\u00fcphesiz y\u00fczy\u0131l\u0131m\u0131z\u0131n en yetenekli a\u015f\u00e7\u0131lar\u0131ndand\u0131. Sadece a\u015f\u00e7\u0131l\u0131kta de\u011fil, malzemenin haz\u0131rlan\u0131\u015f\u0131nda ve birbirine kat\u0131lmas\u0131nda da yarat\u0131c\u0131 ve yenilik\u00e7iydi. \u0130stanbul\u2019un zengin pazarlar\u0131n\u0131 son derece iyi tan\u0131yan Pandeli, hayat\u0131n\u0131n sonuna kadar d\u00fckk\u00e2n\u0131n b\u00fct\u00fcn malzeme al\u0131\u015fveri\u015fini bizzat yapm\u0131\u015ft\u0131. En taze ve en kaliteli meyve, sebze, et ve bal\u0131\u011f\u0131 sa\u011flayabilmek i\u00e7in her sabah erkenden pazara giderdi. Yemeklerin haz\u0131rlan\u0131\u015f\u0131n\u0131 hep kendisi denetlerdi. Her yeme\u011fi k\u00fc\u00e7\u00fck miktarda, a\u015fa\u011f\u0131 yukar\u0131 15-18 porsiyon haz\u0131rlard\u0131. Lokanta servise 12.30\u2019da ba\u015flar, genellikle 13.30\u2019da b\u00fct\u00fcn yemekler t\u00fckenirdi. Pilav ve bulgur pi\u015fiminde Pandeli genellikle su yerine tavuk veya et suyu kullan\u0131rd\u0131. Bu y\u00fczden her zaman lokantan\u0131n mutfa\u011f\u0131nda i\u00e7inde dana kemiklerinin veya tavu\u011fun kaynad\u0131\u011f\u0131 bir tencere bulunurdu. II. D\u00fcnya Sava\u015f\u0131 s\u0131ras\u0131nda bu\u011fday ve un k\u0131tl\u0131\u011f\u0131 h\u00fck\u00fcm s\u00fcrerken Pandeli, mermer havanlarda pirin\u00e7 d\u00f6verek pirin\u00e7 unu yap\u0131yor, bundan lokantas\u0131 i\u00e7in k\u00fc\u00e7\u00fck ekmek somunlar\u0131 haz\u0131rl\u0131yordu. O\u011flunun aktard\u0131\u011f\u0131na g\u00f6re i\u015fte bu zorunlu bulu\u015f ve yarat\u0131c\u0131l\u0131k d\u00f6neminde sonraki y\u0131llarda lokantan\u0131n alameti farikas\u0131 haline gelen badem, tereya\u011f\u0131 ve \u015fekerden yap\u0131lm\u0131\u015f nefis \u2018Pandeli kurabiyeleri\u2019 ortaya \u00e7\u0131kt\u0131. Puf b\u00f6re\u011fi ve tala\u015f kebab\u0131 i\u00e7in haz\u0131rlanan ve a\u011f\u0131zda eriyen b\u00f6rek hamurunun s\u0131rr\u0131, b\u00f6brek ya\u011f\u0131 kullan\u0131lmas\u0131yd\u0131. D\u00f6rt mevsim de\u011fi\u015fen yemekleri, bal\u0131\u011f\u0131, de\u011fi\u015fik et \u00e7e\u015fitleri, d\u00f6neri, \u00e7esitli b\u00f6rekleri, \u0130stanbul tatl\u0131lar\u0131 ve kompostosu ile Pandeli Lokantas\u0131 geleneksel \u0130stanbul mutfa\u011f\u0131n\u0131n g\u00fcn\u00fcm\u00fcze ula\u015fan ger\u00e7ek temsilcilerindendir.<br \/>\nBu sat\u0131rlar\u0131n yazar\u0131, 1950\u2019lerdeki ilkokul y\u0131llar\u0131nda bizzat Pandeli ile tan\u0131\u015fma ve lokantan\u0131n mevsimlik spesiyalitelerini tatman\u0131n bir aile gelene\u011fi olmas\u0131 dolay\u0131s\u0131yla s\u00f6z konusu yemekleri deneme mutlulu\u011funa eri\u015fmi\u015ftir. Pandeli\u2019nin \u2013k\u0131z\u0131n\u0131n \u00e7ocu\u011fu\u2013 torunu olan ada\u015f\u0131 Pandeli k\u00fc\u00e7\u00fck ya\u015flardan ba\u015flayarak dedesinin d\u00fckk\u00e2n\u0131nda mesle\u011fi \u00f6\u011frenir. 1970 ba\u015f\u0131nda Atina\u2019n\u0131n Paleo Faliro semtinde aile gelene\u011fini ayn\u0131 adla a\u00e7t\u0131\u011f\u0131 lokantada ba\u015far\u0131yla s\u00fcrd\u00fcr\u00fcr. S\u00fcre\u00e7 i\u00e7inde o\u011flu Hristo \u00fc\u00e7\u00fcnc\u00fc nesil olarak ayn\u0131 tatlar\u0131 ayn\u0131 nitelikte 2014 y\u0131l\u0131na kadar devam ettirir. Ne ki hazin bir \u015fekilde gen\u00e7 ya\u015fta ya\u015fam\u0131n\u0131 yitirir.
