Atalar\u0131n\u0131n yapt\u0131\u011f\u0131 kilisenin harabesinde dua eden Ermenileri hat\u0131rlayarak geleneklerin pe\u015fine d\u00fc\u015felim dedik. Zira, Dznunt, Paregentan derken i\u015fte Medz Bahk\u2019\u0131n (B\u00fcy\u00fck Oru\u00e7) ortas\u0131na geldik. Oru\u00e7 eskiden zormu\u015f derler b\u00fcy\u00fckler. Mi\u00e7ing olarak adland\u0131r\u0131lan bu \u00f6zel haftada sizin i\u00e7in Anadolu\u2019nun Medz Bahk yemeklerinden \u00f6rnekler verelim istedik. Kimi bulal\u0131m, nas\u0131l yapal\u0131m derken, Ye\u011fisapet Yengem geldi akl\u0131ma. Herkes kendi ekme\u011fini kendi yapard\u0131. Ailenin kad\u0131nlar\u0131 bu k\u00f6fteyi haz\u0131rlarken evin fertleri kadar say\u0131da ve her zamankinden daha b\u00fcy\u00fck k\u00f6fteler haz\u0131rlarlar. Bu k\u00f6ftelerden birinin i\u00e7erisinde para olur. Paray\u0131 bulan o senenin en \u015fansl\u0131 ki\u015fisi say\u0131l\u0131r.<\/p>\n<p>\u0130\u00e7 malzemesi i\u00e7in bol so\u011fan do\u011fran\u0131r. Bu k\u00f6fteyi yaparken i\u00e7erisine bir so\u011fan rendelenir. Biraz pul biber, yazdan kurutulmu\u015f reyhan ve tuzla yo\u011fururuz. \u00d6nce yuvarlar, sonra \u00fczerine bast\u0131r\u0131p yass\u0131la\u015ft\u0131rd\u0131ktan sonra kaynayan suya atar ha\u015flar\u0131z. Di\u011fer tarafta biraz ya\u011f, ya\u011f\u0131n i\u00e7ine sal\u00e7a koyup kavururuz. Bulgur suyu iyice \u00e7ektikten sonra alt\u0131n\u0131 kapat\u0131r maydanoz, ye\u015fil so\u011fan, baharatlar\u0131n\u0131 koyar\u0131z.<\/p>\n<p>Patl\u0131can tur\u015fusu: Bizim oralarda kocaman k\u00fcpler olur. T\u00fcm tur\u015fular bu k\u00fcplerde kurulurdu. Sonbaharda lahana, biber, domates, patl\u0131can envai \u00e7e\u015fit tur\u015fu haz\u0131rlard\u0131k. Yapt\u0131\u011f\u0131m\u0131z tur\u015fular Medz Bahk\u2019ta her masay\u0131 s\u00fcslerdi.<\/p>\n<p>Tur\u015fu i\u00e7in bir g\u00fcn evvelden patl\u0131canlar\u0131 ha\u015flar\u0131z. D\u00fcz bir zeminin veya tahtan\u0131n \u00fczerine dizer, \u00fcst\u00fcn\u00fc bir a\u011f\u0131rl\u0131kla kapat\u0131r\u0131z, b\u00f6ylelikle patl\u0131can, t\u00fcm gece ac\u0131 suyunu b\u0131rak\u0131r. Ertesi g\u00fcn patl\u0131can\u0131n i\u00e7i i\u00e7in domatesli, sar\u0131msakl\u0131, maydanozlu, sivri biberli bir salata haz\u0131rlar onu bol tuzla harmanlar\u0131z. Patl\u0131canlar\u0131 karn\u0131yar\u0131k yapar gibi ortadan \u00e7izer bu harc\u0131 i\u00e7ine koyar k\u00fcp\u00fcn i\u00e7erisine tek-tek, s\u0131k\u0131-s\u0131k\u0131 koyar k\u00fcp\u00fcn a\u011fz\u0131 dolana kadar dizeriz. Bu pestiller zaten aylar \u00f6ncesinden haz\u0131rlanm\u0131\u015f olur. Bizim evde en \u00e7ok dut pestili yap\u0131l\u0131rd\u0131. Malatya\u2019da hemen hemen herkesin bah\u00e7esinde dut a\u011fac\u0131 bulunurdu. Haziranda dut a\u011fac\u0131n\u0131 sallar, dutlar\u0131n olmu\u015funu yerdeki beyaz \u00f6rt\u00fclerin \u00fczerine d\u00f6ker, toplar, y\u0131kard\u0131k. Dutlar\u0131 ince dokunmu\u015f bir torbaya koyar, a\u011fz\u0131n\u0131 s\u0131k\u0131 s\u0131k\u0131 ba\u011flard\u0131k.
